Mandrarossa - Unoaked Chardonnay

The 2002 vintage provided ideal growing conditions due to the temperate summer which created ideal harvesting conditions for the white wines. The grapes were picked at optimum ripeness and then transported as quickly as possible to the winery where they were de-stemmed before being chilled down to 8°C. The chilled grapes were then pressed and cold settled with enzymes. The must was then inoculated with selected yeasts and fermentation took place in stainless steel temperature controlled tanks at between 15-17°C. The resulting wine was then matured on its lees in stainless steel until ready for bottling. Tasting Note: A generous style of wine, with ripe tropical fruit flavours and a balanced, rounded finish.

This is our most widely planted cultivar and this year the grapes ripened at lower sugar levels than normal. This is good news in a traditionally warm area where high alcohols are the norm. A lot of this blend comes from our cooler vineyards. The wine has excellent colour and a marked peppery complexity.

Good colour meant that the wines could be pressed off even earlier into the ferment to give soft, dark coloured full flavoured wines.

This dry Rosé has the bright red colour of a toffee apple. The nose is reminiscent of sweet fruit and bread-and-butter pudding. The sweet taste opens to show flavours of mixed fruit cocktail.

The wine was made by bleeding off juice from various Shiraz vineyards after skin contact ranging from 2 to 12 hours. The fermenting must kept on having fresh juice added to it with each intake of Shiraz and this resulted in a long slow ferment at low temperatures 12-15°C This resulted in a wine with good fruit and a complex mouth feel.
