Mandrarossa - Unoaked Chardonnay

The 2002 vintage provided ideal growing conditions due to the temperate summer which created ideal harvesting conditions for the white wines. The grapes were picked at optimum ripeness and then transported as quickly as possible to the winery where they were de-stemmed before being chilled down to 8°C. The chilled grapes were then pressed and cold settled with enzymes. The must was then inoculated with selected yeasts and fermentation took place in stainless steel temperature controlled tanks at between 15-17°C. The resulting wine was then matured on its lees in stainless steel until ready for bottling. Tasting Note: A generous style of wine, with ripe tropical fruit flavours and a balanced, rounded finish.

During the drying of the grapes on straw and Rooibos, the fragrance of the Rooibos infuses the grapes. We then gather the grapes, put them through the crusher and de-stemmer and soak them in their own juice, at low temperature, to re-hydrate the more raisined berries. The mash is then pressed, introduced to Sauterne yeast and fermented in barrels until the yeast can go no further.
