Stellar Organics - Shiraz Rose

This dry Rosé has the bright red colour of a toffee apple. The nose is reminiscent of sweet fruit and bread-and-butter pudding. The sweet taste opens to show flavours of mixed fruit cocktail.

The wine was made by bleeding off juice from various Shiraz vineyards after skin contact ranging from 2 to 12 hours. The fermenting must kept on having fresh juice added to it with each intake of Shiraz and this resulted in a long slow ferment at low temperatures 12-15°C This resulted in a wine with good fruit and a complex mouth feel.

This opaque, reddish-purple wine contains expressive aromas of pepper, spice, blueberry and violet. Iy makes a fresh entry on the palate with layers of fresh fruit and soft tannins that carry through the long silky finish.

This is our most widely planted cultivar and this year the grapes ripened at lower sugar levels than normal. This is good news in a traditionally warm area where high alcohols are the norm. A lot of this blend comes from our cooler vineyards. The wine has excellent colour and a marked peppery complexity.

Good colour meant that the wines could be pressed off even earlier into the ferment to give soft, dark coloured full flavoured wines.

A blend of Merlot, Cabernet Sauvignon and Shiraz. Ripe, blood plum flesh in colour with freshly picked blackcurrants accompanied by black cherries and spicy cinnamon aromas on the nose. A soft palate of luscious blackcurrants sprinkled with clove pepper spice, and tightly structured tannins. Match with port & garlic marinated roast beef with mashed sweet potato.

Deep brick red with flashes of violet. Varietal bouquet characters of ripe cherries, blackcurrant and plummy berry fruits, interwoven with smoky, cigar and toasty oak nuances. The palate has enticing ripe black cherry, rich fruit sweetness and herbal characters. These are accompanied by persistent chocolate, mocha, cigar box oak influences. The tannins are fine and persistent in length. Great with Pizza, Antipasti or a cheese platter.

Deep crimson in colour with lifted perfume of blueberries and violets with lovely biscuity vanillin characters and hints of briary spice on the nose. On the palate blueberries and satsuma plums are the dominating fruit characters marrying well with the vanillin oak. Fine silky tannins and hints of pepper balances the sweet fruit and the wine finish is long with black cherries, hints of mocha and briary spice.
